Banana Sponge Cake

1 cup All purpose flour/Maida

1 tsp Baking powder

3/4 cup Powdered sugar

3 Egg whites

3 Egg yolks

3 tbsp Water

1/4 cup Ripe banana mashed

2 tbsp Water

1 tsp Nutmeg powder

1 tsp Cinnamon powder

1/2 tsp Cardamom powder

1/2 tsp Dry ginger powder


2Grease and dust a 8” aluminium pan. Sift the flour and the spices thrice.

3Separate the eggs.

4Keep the mashed banana and powdered sugar ready.

5Using a hand mixer, beat the egg whites and 1/4 cup of powdered sugar until stiff. Keep it aside.

6Now, beat the egg yolks, 3 tbsp water and rest of the powdered sugar until the mixture is pale yellow in colour.

7Gently fold in the dry ingredients and egg whites. Add water 2 tbsp of water if the batter is too thick.

8Bake for 12 minutes at 140 degrees C.
