Cornflake Cookies

2 cup All purpose flour/Maida

3/4 tsp Baking powder

1/4 tsp Salt

3/4 cup Butter

3/4 cup Granulated Sugar

1/4 cup Brown sugar

1 Egg

1 tsp Vanilla essence

3/4 cup Dried apricots

1/2 cup Cranberries

1 cup Corn flake


1Keep all the ingredients ready. Cut the apricots and cranberries into small pieces.

2Mix all the dry ingredients together.

3Cream butter and sugar well.

4Add gently beaten egg.

5Mix the flour mixture and creamed ingredients.

6Take a tablespoon of dough.

7Cover it with cornflake firmly. You can add few pieces of chopped apricot and cranberries(optional).

9Line a rectangular tin with parchment sheet.

10Refrigerate it for 30 minutes.

11Meanwhile pre heat the oven at 150 degree C with both top and bottom rods on.

12Bake for 18 minutes.

13Transfer it to a wire rack. Let it cool.
