Lemon Pistachio Butter Cake

125 g All purpose flour/ Maida

1/2 tsp Baking powder

1/2 tsp Baking soda

110 g Salted butter

100 g Granulated sugar

2 Egg

1 tbsp Lemon zest

1 tbsp Lemon juice

8 tbsp Water

40 g Pistachio coarsely ground


1Pre heat the oven at 150 degrees C.

2Grease and dust a 6” tin or a small loaf tin. Sift flour, baking powder and baking soda thrice. Keep it aside.

3Cream butter, lemon zest and sugar.

4Add gently beaten eggs.

5Now fold in flour, water and ground pistachios.

6Bake for 35-40 minutes or until done at 150 degrees C .

This was very crumbly and delicious. I substituted walnuts for pistachios and upped the lemon juice. I will have to add more lemon juice and zest for my taste next time but I’m definitely saving this receipt. It’s a keeper! Thanks!
