Buns with potato filling

These mini buns are super soft and pillowy. Mildly spicy and very delicious.
Perfect with a cup of tea.

Ingredients

3 1/2 cups All purpose flour

2 1/4 tsp Instant dry yeast

1 cup Warm water

2 tbsp Oil

1 tbsp Salt

1 tbsp Sugar

Ingredients for filling

2 Boiled potatoes

1 Onion

2 Garlic

Ingredients for the masala

1/2 tsp Red chilli powder

1 tsp Coriander powder

1/2 tsp Tumeric powder

3 tbsp Water

1 tsp Garam masala powder

2 tbsp Oil

Salt to taste

Directions

1In a bowl mix flour,sugar,salt ,yeast and oil well . Add warm water and knead for 10-12 minutes until the dough is elastic and shiny . Transfer the dough into a well oiled bowl . Cover it with cling film and wait for the first rise . Let it become double in size . Deflate the dough and knead it gently . Divide the dough in to equal sized balls . Stuff each one with filling and keep it for the second rise . Apply milk on the dough with a brush and wait for the second rise . Pre heat the oven at 200°c . Cover the dough with aluminum foil and bake for 12-15 minutes . Remove the aluminum foil . Eggwash the buns and bake again for 3-4 mins . Transfer the buns to a wire rack and apply butter liberally .

Direction for the filling

1Heat a pan and pour oil and saute the chopped onion and garlic. Add the spices and the boiled potatoes. Add salt while boiling the potatoes Reduce the flame and mix well, Cook for 3-4 minutes and turn off the flame. Let it cool.

Notes..
I proofed the dough in microwave.
Add extra 1/4 cup of water if the dough is too stiff while kneading.
The yeast was directly added .
The filling should be dry mix.
I used potatoes for the filling.
Egg masala or paneer or chicken filling can be tried
For even sized buns each piece of the dough weighs 40 gms.
I kept the dough in cupcake liners for second proofing.
The reason is the size of the buns increase while baking and they tend to stick each other.
This can be avoided if cupcake liners are used and we get a nice round shaped buns.
Method to proof in microwave
Place 11/2 cup of water in the microwave and let it boil well.
Cover the dough with a cling film .
Turn off the microwave and keep the dough beside the water.
Close the microwave and wait for the first rise.

Yes ..you can refrigerate or freeze the dough.

Dear Shano Mam, I am baking buns for the first time and referring to this recipe of yours. I have a very basic doubt….can I preserve my dough in the refrigerator for baking rest of the buns later on since my oven is small and can’t take all the buns at one time?
