Appam Batter -1

Appam is a type of pancake made with fermented rice batter and coconut . This is a popular South Indian dish .

Ingredients

2 cup Sliky raw rice

1 cup Grated coconut

1 cup Cooked rice

3 tbsp Sugar

1 tsp Salt

1 1/4 cup Water

3/4 tsp Instant Dry Yeast

1 tsp Baking Soda

Directions

1Soak the rice for 3-4 hrs . Drain the rice and grind it along with other ingredients into smooth batter . Add instant dry yeast . Keep it in a warm place for fermentation .

2Once it is fermented , add soda powder . If the batter is too thick ,add water . The batter should not be too thick nor watery .

3Heat appam pan . Grease it well with gingelly oil . Make appams by pouring the batter into the center and gently spreading it on to the sides . Cover it with a heavy lid and let it cook for a minute or two .

4Use a spatula to remove the appam from the pan .

I used instant dry yeast in this recipe .So it is directly added . If active dry yeast is used ,it should be proofed separately .

Hi Melisa,
The quality of this rice is excellent .very aromatic and it gives appam a nice white colour instead of pale yellow .
I used dosa tawa to make appam ..You can use appam kadai too .
