Banana cinnamon clove cake

This cake extremely light, soft and moist cake is flavored with cloves & cinnamon . I used demerara sugar infused with real Madagascar vanilla for deep rich golden brown color.This makes a lovely dessert if paired with orange flavored ice cream .

1Pre heat the oven at 180 degree C . Grease and dust a 8" round cake tin . Powder the sugar along with cloves . Sift flour,baking powder,soda powder,salt and cinnamon powder . Cream butter and sugar . Add beaten egg and mix well . Add curd and mix gently . The mixture may curdle while adding curd . Using a spatula ,fold in rest of the dry ingredients very gently . Add chopped cashew nuts . Transfer the batter into prepared cake tin . Bake for 35-40 minutes or until done .
All the ingredients including curd must be room temperature .
White sugar can be used instead of demerara sugar .
Use thick curd .
If salted butter is used do not add extra salt .
It is always advisable to weigh eggs .
Egg in this recipe weighs 57gms with shell .
Temperature vary in each oven .
