Buttery Brioche bun (Burger bun)

These mini brioche buns are light , soft and buttery .A perfect burger bun..

  • Prep: 1 hr 10 mins
  • Cook: 20 mins
  • Yields: 7 nos.

Ingredients

2 1/2 cups All purpose flour

1 1/2 tsp Instant dry yeast

2 tbsp Sugar

1 1/2 tbsp Warm milk

2 tbsp Butter

1 Egg

1 tsp Salt

3/4 cup Water

1 1/2 tbsp Sesame seed

1 Egg ( egg wash )

Directions

1In a cup mix warm milk , sugar and yeast .

2Let it stand until it is frothy .

3 In a bowl mix flour and salt well . Add butter and mix well .

4Mix the yeast and lightly beaten egg .

5Add water and knead well for 8-10 minutes .

6The dough will be sticky . Do not add extra flour .

7Form the dough into a ball .

8Apply oil on the dough and transfer the dough into a well oiled bowl .

9Cover it with cling film and let it double in size .

10Gently knock the air out and knead gently for a minute or two .

11It is always advisable to weigh the dough and then divide it into equal portions .

12Each portion weigh around 60 gms .

13Roll them into balls and place then on a well oiled baking tray . Cover the tin with cling film and wait for the second rise .

14Let it double in size .Egg wash the buns and sprinkle sesame seeds . Pre heat the oven at 180 degree C .

15Cover the tin with aluminum foil and bake at 180 degree C for 13 minutes . Now take the tray out and remove the aluminum foil and bake for another 5-7 minutes .

16Transfer the buns to a wire rack and apply butter or oil . Let the buns cool well for at least 3-4 hours .

It is always advisable to weigh the ingredients . Good quality yeast give excellent result .The dough will be slightly sticky . Do not add extra flour . Do not over knead . Be careful not to over proof . Temperature of each oven will vary .
