1Preheat the oven at 150 degrees C. Keep the cupcake moulds and liners ready. Sift the flour and baking powder thrice.
2Cream butter, lemon zest and sugar well.
3Add gently beaten egg.
4Fold in the sifted ingredients. Add water and lemon juice. Now fold in desiccated coconut.
5Transfer the batter into the prepared cupcake moulds. Place a cherry on top.
6Bake for 18-20 minutes.
