Spicy white bread

This bread is fluffy and mildly spicy .
It is flavoured with chopped ginger ,carrot and black pepper .
This goes very well chicken stew or creamy vegetable curry .

  • Prep: 1 hr 40 mins
  • Cook: 35 mins

Ingredients

2 cups All purpose flour

3/4 cup Warm water

1 tbsp Olive oil

1 tbsp Sugar

1 1/8 tsp Instant dry yeast

1/2 tsp Black pepper

1 tbsp Finely chopped carrot

1 tsp Chopped ginger

1/2 tsp Salt

Directions

1In a bowl mix all the dry ingredients well . (Do not add carrot, ginger and black pepper ) Add warm water . Knead for 9-10 minutes . The dough should be shiny ,smooth and elastic . Form the dough into a ball and lightly brush it with oil . Place the dough in a lightly oiled bow l. Cover it with cling film and let it rise double its size . Once risen, take the dough out knead gently . Add all the chopped ingredients . Knead for another 2-3 minutes . Shape the loaf and transfer it to a loaf tin . I used 8" × 3.5" loaf tin . Cover it with cling film and wait for the second rise . Pre heat the oven at 200°C with both the rods on . Remove the cling film and make a tent with aluminum foil . Place the tin on the bottom rack of the oven . Bake for 35 minutes . The bread is ready when it sounds hollow when tapped . Take the bread out and egg wash it . Place it in the oven and bake for another five minutes . Remove the loaf from the tin and place it on the wire rack . Apply butter liberally . Let it cool at least for 3-4 hrs . Slice it only after it is cooled thoroughly .

I used instant dry yeast.I added it directly to the flour.
Any refined oil or unsalted butter can be used instead of olive oil.
If butter is added use melted butter..

Pooja..check the temperature of the oven.Bake at 180 degrees C .Do not open the oven during the first 10 mins of baking..

Hi mam… I m big fan of ur recipes. I tried spinach bread n it came out very nice. But when i m trying this spicy bread m facing problem. My bread is ricing well but while baking its going with flat top n shrinking. I m not doing over proofing n follwing proper recipe. After putting in oven n mid of baking its shrinks at top. Pls suggest me what to do…

Boshina.. 10″ loaf tin is too big .Please use an 8″ loaf tin next time .

Mam I tested this recipe came out good..but was a bit flat as I used a 10″ loaf tin.I have posted the same in home bakers guild.can I pls provide a feedback on the same
