Chicken Soup with Rice Noodles and Shitake Mushrooms

3/4 cup Boneless chicken cut into small pieces

2 Dried Shitake mushrooms

2 cups Chicken stock

Rice noodles - handful

3 cup Green chillies chopped

2 tbsp Garlic chopped

2 tbsp Ginger chopped

4 tbsp Onion chopped

1 tsp Rice vinegar

1 tbsp Freshly ground black pepper

1 tbsp Coriander leaves

Sugar a pinch

Salt to taste

1 tbsp Oil


2Soak the mushrooms in 1 1/2cup water for 30 minutes.

3Keep all the other ingredients ready.

4Drain and chop the mushrooms into small pieces.

5In a heavy bottom saucepan, add 1 tbsp of oil. Add mushrooms. Sauté for a minute. Add chicken. Sauté on medium flame for a minute. Add the rest of the ingredients except coriander leaves.Cover the sauce pan.

6Let it simmer on low flame for 10-12 minutes. Remove the lid. Add coriander leaves.

7Serve hot.
