Coconut pudding flavoured with lemon and cinnamon

This beautifully flavoured pudding is made of fresh coconut milk . It is sweet ,creamy and rich with coconut flavour . Lime zest and juice gives a mild citruzy flavour .It is absolutely gelatine free and eggless .

  • Prep: 10 mins
  • Cook: 15 mins


1 3/4 cup Coconut milk

1/4 cup Sugar

1/4 cup Corn flour

3/4 cup Water

1 tsp Lemon zest

2 tsp Lemon juice


1In a heavy bottom saucepan whisk sugar , corn flour, water until smooth and lump free . Add thick coconut milk and mix well . Cook it over medium heat stirring continually for 20 minutes . Let it thicken . Remove from heat . Add lemon zest and lemon juice and scrape the pudding into prepared tin . Cool it for 10 - 15 minutes . Refrigerate for 3 - 4 hours . Unmould it and dust it with cinnamon powder and serve chilled .
