Cranberry Lemon Tea Cake..

125 g All purpose flour/Maida

110 g Salted butter

115 g Granulated sugar

2 Egg

1/2 tsp Baking powder

1/4 tsp Baking soda

4 tbsp Water

2 tsp Lemon zest

1 tbsp Lemon juice

1/3 cup Dried cranberries

1/4 cup Water to soak the berries

Tonovin essence- 1 drop


1Soak cranberries in 1/4 cup of water for 3-4 hrs.

2Grind the cranberries into thick, smooth paste. Keep it aside.

3Pre heat the oven at 150 degrees C.

4Sift flour, baking powder and baking soda thrice. Grease and dust a 6” aluminium pan or a small loaf tin.

5Cream butter, lemon zest and sugar well.

6Add gently beaten eggs.

7Fold in flour, lemon juice and water.

8Fold in the ingredients using a spatula.

9Add a drop of tonovin essence .

10Add cranberry paste.

11Fold in gently.

12Transfer it to the prepared tin.

13Bake at 150 degrees C for 40 minutes.
