Dry fruits soaked in black tea for fruit cake..

Dry fruits..

1/4 cup Dates

1/4 cup Prunes

2 tbsp Current

2 tbsp Raisins

2 tbsp Dehydrated papaya

2 tbsp Dried raspberries

2 tbsp Dried cranberries

2 tbsp Blueberries

2 tbsp Dehydrated kiwi fruit

1 tbsp Orange peel

1 tbsp glazed cherries

Roasted nuts...

4 tbsp Walnuts chopped

4 tbsp Pecans chopped

Strong black tea..

1 cup Water

2 tsp Tea powder


1Cut the dehydrated fruits , dates , prunes , raisins and currants into small piecesand transfer it into a glass bottle.

2Boil water in a saucepan .Add tea leaves.Let it boil well for a minute or two. Turn off the heat . Keep it aside 3 -4 minutes.

3Pass the tea through the strainer .

4Soak the fruits in tea .

5Let the fruits soak for 24 hrs ..Store in a cool dark place. Do not refrigerate.

6Toast the nuts for a minute or two. Chop it finely. Do not soak the nuts .It can be mixed along with the batter.

Tutti frutti can be added instead of ย dehydrated fruits.

Cashewnuts can be substituted for walnuts and pecans.

Fruits can be soaked in orange juice , pineapple juice, rum , wine or grape juice.

So we get 1 1/2 cup of soaked fruit and 1/2 cup of roasted nuts .

For 1 cup flour , we need 1/2 cup of soaked fruits and 1/4 cup of roasted nuts.

If a heavier cake is preferred, 3/4 cup of fruits and 1/4 cup of roasted nuts can be added..
