Fruit Cake

Ingredients

Step 1

Soak the following ingredients in Whiskey for 2 days.

40 g Dried Blueberries

40 g Dried Cranberries

2 tbsp Candied ginger chopped

200 ml Whiskey

Step 2

Ingredients to be chopped ..

50 g Chopped Dates

50 g Raisins

25 g Apricot

25 g Prunes

50 g Dried Figs

40 g Lightly toasted Almonds

50 g Glazed Cherries

Step 3

Spices required

1 tsp Cinnamon powder

1 tsp Nutmeg powder

1 tsp Aniseed powder

3/4 tsp Clove powder

1 tsp Dry ginger powder

Step 4

For the Cake Batter

150 g All purpose flour

1/2 tsp Baking powder

1/2 tsp Baking Soda

40 g Salted Butter

1 Egg

120 g Treacle Sugar

1/2 tsp Salt

160 ml Hot water

Orange extract- 2 drops

Directions

Step 1

1Soak all the ingredients mentioned in Step 1 in Whiskey for 2 days at room temperature.

Step 2

1Keep all the ingredients mentioned in Step 2 ready.

Step 3

1Powder all the spices mentioned in Step 3.

Step 4

1Keep all the ingredients mentioned in Step 4 ready. Sift the flour with baking powderand baking soda at least 5 times.

Step 5

1In a saucepan, mix chopped dates, figs, raisins , prunes (mentioned in Step 2), butter, treacle sugar and spices together.

2Add 160 ml of hot water.

3Heat on low flame for 3-4 minutes. Turn off the heat.

4Let it thicken and cool well.

5Pre heat the oven at 140 degrees C. Grease and dust a 8” aluminium pan. Double line the pan with parchment sheet.

6Mix the ground spices into the cooked fruit mixture.

7Now add lightly beaten egg.

8Take 100 gms of soaked berries. Drain the liquid. Do not discard the liquid. You can add 1-2 tbsp of this liquid to the batter if the batter is too thick .

9Coat the soaked berries with sifted flour.

10Gently fold in these ingredients into the boiled fruits.

11Add orange extract .

12Transfer the batter to the prepared tin.

13Bring down the oven temperature to 130 degrees C.

14Bake for 1 hr 20 minutes or until done. You can place a small bowl of water in the oven while baking. This would keep the cake moist.

15Check with a wooden toothpick if the cake is done.
