Lemon Basil Cake

125 g Cake flour

1/2 tsp Baking powder

1/8 tsp Baking soda

100 g Salted Butter

115 g Granulated Sugar

1 tbsp Lemon zest

1/2 tbsp Lemon juice

4 tbsp Fresh Basil leaves finely chopped

1 tbsp Ginger finely chopped

6-7 tbsp Water


2Pre heat the oven at 150 degrees C. Grease and dust a 6 aluminium pan.

3Sift all the dry ingredients thrice.

4Cream butter and sugar well.

5Add lemon zest, ginger and Basil leaves.Continue creaming.

6Add lightly beaten egg.

7Fold in the flour mixture. Add water.

8Add 2-3 tbsp of extra water if the batter is too thick.

9Transfer the batter to the prepared tin.

10Bake for 35-45 minutes at 150 degrees C.
