Muffin Loaf

2 cups Self raising flour

1/2 cup Semolina

1 tsp Baking soda

3 Eggs

1/4 cup Thick curd

1/4 cup Chicken stock

1/3 cup Refine oil

2 tsp Salt

1/4 cup Chicken salami

1/4 cup Shredded chicken

1/2 cup Chicken sausage

1/4 cup Onion chopped fine

3 tbsp Green chilli chopped

1 tbsp Ginger chopped

2 tbsp Garlic chopped

1/4 cup Green peas

1/4 cup Basil leaves chopped

1/4 cups Spring onion leaves

1 tbsp Pepper powder

3 tbsp Oil

Salt to taste


1Heat a heavy bottom saucepan. Add 3 tbsp of oil. Add ginger, garlic and onion. Stir on low flame . Add chicken, sausages and salami. Stir well. Now add the herbs, green chillies, green peas and salt. Turn off the heat.

2In a bowl beat eggs using a hand mixer. Add oil and milk. Stir in the dry ingredients and wet ingredients together. Add the prepared chicken / salami . Gently stir using a spatula. Add 1-2 tbsp of water if the batter is too thick.

3Cover the bowl with a cling film. Let it rest of 10 minutes.

4Meanwhile, Pre heat the oven at 140 degrees C.

5Grease and dust a loaf tin.

6Transfer the prepared batter into a loaf tin. Place tomato slices / capsicum slices on top if you desire.

7Bake for 25-30 minutes at 140 degrees C .
