2Mix all the dry ingredients in a stand mixer bowl on medium speed.
3Add gently beaten egg and water.
4Knead for 10 -12 minutes on medium speed. Add refined oil.
5Knead for another 5-6 minutes.
6Turn off the mixer. Cover the dough with cling film or a wet kitchen towel.
7Let the dough rise. Let it double in volume.
8Punch down the dough gently.
9Knead for a minute or two.
10Grease and dust a rectangular tin. Line with parchment sheet.
11Roll out the dough into rectangular shape.
12Place the dough gently into the prepared tin. Let it rise.
13Meanwhile, Pre heat the oven at 180 degrees C.
14 Gently make small dents in the dough using your knuckles.
15Place the tin into the oven.
16Bake for 25 minutes at 180 degrees C.
17Let the bread cool well.
18Slice the foccacia into small strips.
19Brush the strips with oil or butter.
20Bake on low heat at 140 degrees C for 50 minutes.
