Pineapple cherry butter cake..

This colourful cake is moist and very soft . Cherries and pineapple pieces are added for flavour .

  • Cook: 35 mins

Ingredients

115 g All purpose flour

115 g Butter

110 g Powdered sugar

1/2 tsp Baking powder

1/4 cup Water

2 Egg

1/8 tsp Salt

2 tbsp Canned cherries chopped

2 tbsp Pine apple pieces

3 tsp Sugar

1/4 tsp Vanilla essence

Directions

1Sift the flour, baking powder and salt thrice. Grease and dust a 7" round tin . Pre heat the oven at 160 degree C .Separate the egg whites and yolks .Using an electric mixer, beat egg whites till stiff. Keep it aside .

2Cook the pineapple pieces and 11/2 tsp of sugar in low heat for a minute or two . Keep it aside . Let it cool .

3Cook the cherries in 11/2 tsp of sugar in low flame for a minute . Turn off the heat and let it cool .

4Beat butter well using an electric mixer . Add powdered sugar. Beat it well .

5Beat the egg yolks lightly and add it to the above mixture .

6Using a spatula , gently fold in flour and water , starting and ending with flour. Add vanilla essence.

7Gently fold in pineapple and cherries . Fold in beaten egg whites .

8Transfer the batter into the prepared cake tin and bake at 160 degrees C for 35 minutes or until done .

Hi Shano Bijo, Do we have to stew or cook canned pineapple and canned cherries? I am asking as the canned fruits already have extra sugar in them…And can we use the liquid from the canned pineapple instead of water?
