Queen Of Puddings

This flavour packed dessert has three layers ,with bread crumbs as the base. The middle layer is stewed kiwifruit and candied pomelo and is crowned with meringue which is as light as cloud . I added lemon juice and zest to balance the sweetness and flavour .

Ingredients

Ingredients for the bread layer

1 1/2 cup Bread crumbs

2 cup Milk

2 tbsp Butter

3 tbsp Castor sugar

2 Egg yolk

1/2 tsp Vanilla essence

1/2 tsp lemon zest

Ingredients for the fruit layer

5 Kiwi fruit

1/3 cup Candied Pomelo ( chopped )

1/2 tsp Lemon juice

1/4 cup Castor sugar

Ingredients for meringue

2 Egg whites

1/4 cup Castor sugar

1/2 tsp Lemon juice

Directions

1In a sauce pan heat milk and butter. Pour it over the bread crumbs and soak it for 15 minutes . Whisk it gently and keep it aside . Separate egg whites and yolks . Gently beat egg yolks and 1/4 cup of sugar until pale in colour . Add this to the soaked bread and whisk well. Add lemon rind and vanilla essence . Pre heat the oven at 160 degree C for 10 minutes . Transfer this bread mixture into a pyrex dish .Place the dish in a flat vessel with hot water in it and bake for 30 minutes . Bake the pudding until the center is firmly set . While it is in the oven , chop the kiwi fruits and candied pomelo . In a saucepan add the chopped ingredients , lemon juice and sugar. Let it cook until it is soft . Spread it evenly over the bread layer . For the meringue .. Using an electric mixer , beat the egg whites . Add the lemon juice and sugar . Beat it well until stiff and glossy . Spread it evenly with a spoon on the fruit layer . I used a fork to create a pattern and bake it for 13 -14 minutes until it turns light golden brown . This can be served warm or refrigerate for 3 - 4 hrs .

Hi Shano,
your recipes are quite interesting. I yearn to try out a couple of them. May I know what is your cup measure> Is it 210 ml, or 250 ml?
