Stuffed buns flavoured with garlic,lemon zest and black pepper..

For the dough..

2 cups All purpose flour/ Maida

1 1/2 tbsp Milk powder

1 1/8 tsp Instant dry yeast

Water 3/4 cup + 1 tbsp

5 tsp Fresh cream

3/4 tbsp Sugar

1 tbsp Oil

3/4 tsp Salt

For the flavouring..

1 tsp Lemon zest

1 1/2 tsp Garlic paste

1 tsp Black pepper ( coarsely ground )

3 tbsp Oil


1In a bowl , mix flour, milk powder ,yeast,fresh cream ,salt and sugar.

2Mix it well.

3Add water.

4Knead well for 6-7 minutes. Add oil .Knead for another 3-4 minutes.

5Shape it into a ball and place it in a well oiled bowl . Let it rise . Meanwhile prepare flavoured oil and the filling.

6In a small bowl, mix oil , garlic paste and lemonzest and place it in the microwave for a minute. Keep it aside.

7Keep the filling ready. Sauté the mushroom and onion for a minute .Add salt .

8Keep sliced paprika ready .

9Let the dough double in size.

10Gently punch the dough.

11Knead the dough for a minute or two.

12Divide the dough into 14 portions.

13Each portion weigh around 30 gms .

14Place the filling along with paprika and cheese .

15Seal the edges .

16Arrange them in a 8 " round tin .

17Brush it with flavoured oil . Keep 1 tbsp of oil aside .

18Let it proof ..

19Meanwhile pre heat the oven at 180 degree C with top and bottom rods on.

20Cover the tin with aluminum foil and bake for 13 minutes. Now remove the aluminum foil and apply the flavoured oil.

21Bake for another 3-4 mins with top rod alone on or until it is evenly brown.

Hi Shano….I have tried so many bread reccakes pies n failed at every attempt..Tried this recipe for stuffed buns and braided bread..n it came out perfect.I was jumping with joy.Waiting to try your wheat bread tomorrow.Thanks Hun for sharing your knowledge…God bless….am a BIG fan of yours…

Dear shano. I follow your recipes. Tried your plum cake with tea and cake with orange and coconut. I loved it. Tried the stuffed buns too. My first ever try on buns or bread. Set at 180 degrees for 13 minutes. Then 3 minutes too. But looked uncooked… so cooked for 10 minutes more.It looked OK but was a bit hard. Next day it became softer. I must have made some mistakes. Pls advice me… planning to try tomorrow once again.

Devyani ..Instant dry yeast is different from Active dry yeast .I always use Angel brand instant dry yeast .

Hi, is instant yeast different from active dry yeast? I have followed your recipe using bluebird active dry yeast and I reckon I’ve made a mistake. Your buns look absolutely sensational and I love warm stuffed buns.
