Tea cake

This is a very moist and soft tea cake or butter cake . I love candied fruits .
I have added candied Raw mango , candied Papaya and candied kiwi fruit.
Lemon juice gives a beautiful , refreshing citrus flavour .
Cream cheese gives a perfect texture.

  • Prep: 20 mins
  • Cook: 40 mins

Ingredients

115 g Flour

2 1/2 g Baking powder

100 g Salted butter

25 g Cream cheese

115 g Powdered sugar

3 Egg

1/4 cup Water

1 tsp Lemon juice

1/3 cup Candied fruits chopped

Directions

1Prepare a 7 1/2" cake tin. Pre heat the oven at 170 degree C . Separate the egg whites and yolk . Beat egg whites until stiff and keep aside . Sift flour and baking powder thrice . Cream butter and sugar until light and fluffy . Add lightly beaten egg yolks . Add cream cheese . Using a spatula , gently fold in flour ,water and lemon juice starting and ending with flour. Gently fold in candied fruits . Fold in beaten egg whites . Transfer the batter to the prepared cake tin . Bake at 170 degree C for 35 - 40 minutes or until done .

All the ingredients should be at room temperature .
Candied fruits of your choice can be added.
Do not stir or over beat the batter .

Thanks for ur reply.I will play around with this tip in my convection oven.Genreally i take out the cake once toothpick test passes.I will try baking few more mins in upper rack. BTW all ur recipes are drooling..love the combinations of ingredients u use in baking.

Sangeetha.. I use MR40L for baking..Pre heat the oven with both the coils on for 10 minutes .Place the batter on the bottom rack.
Turn off the top rod.Let it bake ..Check with a wooden toothpick if the cake is done. Then turn off the bottom rod and turn on the top rod alone .
Let the top brown evenly .This will prevent the crust from forming and the cake will remain moist .
