Thin crust pizza..

Ingredients

For the dough

1 cup All purpose flour/ Maida

3/4 cup Semolina flour

1 tsp Instant dry yeast

1/4 tsp Salt

Water 1/2 cup + 1 tbsp

1/2 tbsp Honey

1 tbsp Olive oil

For the flavouring oil

1 1/2 tsp Red chilli flakes

1 tbsp Olive oil

This is for one 8

Tomato blanched 1 medium sized

Onion 1 medium size

1 tsp Garlic paste

1/2 tsp Sugar

Salt

1/2 tsp Red chilli powder

1/2 tsp Thyme

1/2 tsp Basil

4-5 Mushroom

2 tbsp Paprika

3 tbsp Cheese grated

Directions

1Mix all purpose flour , semolina flour , instant dry yeast and salt well.

2Add honey.

3Mix well.

4Add water .

5Knead it gently for 4-5 minutes.

6Add oil and knead for 3-4 minutes.

7Shape it into a ball and place it in a well oiled bowl. Cover it with cling film.

8Meanwhile , prepare the flavouring.. Heat oil. Add red chilli flakes and heat it for a minute.Turn off the heat . Keep it aside.

9Now prepare the topping. Blanch the tomato and purée it. Keep onion paste and garlic paste ready . Heat 2 tbsp of oil in a pan . Add onion paste and garlic paste.Lower the heat . Stir well. Add tomato purée .Let it thicken. Add chilli powder. Now add tomato ketchup ,salt and sugar . Add 2 tbsp of water. Let it simmer. Add thyme and basil. Turn off the heat and add mushrooms and paprika..

10Let the dough double in volume.

11Now .. punch the dough gently.

12Add the flavoured oil.

13Shape it into a ball . Cover it with cling film and store it in an air tight container. Refrigerate it for an hour or two.

14Take the dough out . Take a small portion, which weigh around 115 gms. Shape it into a ball.

15Keep a 8" cast iron pan ready .

16Using a rolling pin ,roll it out into 8" diameter.

18Use a fork to prick the dough or your knuckles to make small depressions.. Pre heat the oven at 180 degree C with both top and bottom rods on. Place the dough in the oven without the toppings. Bake for 2-3 mins . Take the pan out and place the toppings .

19Cover with an aluminium foil and bake for 8-9 mins .Now take the pan out. Remove the aluminium foil. Place the pan back in the oven and bake for 8-9 mins.

It is always better to add ground semolina..

Can I use semolina without grinding? I just made the dough in a hurry using semolina. Will the crust be fine.

You will get a better crust if you refrigerate..No ..not necessary.you can use it straight from the fridge..😊
