This cake is very soft and moist . I used Alphonso mango which gives a lovely flavor and richness to the cake . Cranberries gives a nice texture to the cake . Lemon juice is added to balance the sweetness . This soft and moist cake is mildly flavoured with cinnamon . The colour of the cake deepens the next day . A very easy recipe to follow . Lemon juice gives a beautiful , refreshing citrus flavour .
Cream cheese gives a perfect texture.
